The custom of giving thanks for the annual harvest is one of the world's oldest celebrations and dates back to the dawn of civilization. The pumpkin is a symbol of harvest time, and pumpkin pie is generally eaten during the fall and early winter. In the United States and Canada, it is usually prepared for the Thanksgiving holiday. The pumpkin is native to North America.
As a young boy, every year I watched my mother gather her ingredients: the pumpkin, flour, sugar, condensed milk, eggs, and spices. I loved the smell of the roasting pumpkin, but I was no fan of the pie. I liked pecan pie. Over the years I acquired a real taste for this holiday desert. For many years, my wife and I have carried on the tradition of baking at least one or two pies for the Thanksgiving holiday.
