Basic corn chowder soup is commonly made of corn, onion, celery, milk or cream, and butter. Corn chowder is a thick cream-based soup similar to New England clam chowder, except corn is used instead of clams in the recipe. It is often served as a vegetarian alternative to clam chowder.
In the United States, recipes for corn chowder date back to 1884, when Mary Lincoln published her first corn chowder recipe in the Boston Cookbook. In the early 1900s, the Shakers were well known for their simple chowder recipe using just three basic ingredients: cream, butter, and fresh corn.
In recent years, widespread drought and hot weather is decimating the cultivation of corn in the United States, China, India, Mexico, Argentina, Brazil, Romania, Ukraine, and Russia. Climate change continues to take a toll on this vitally important vegetable and grain. The change in climate has significantly affected the cost of livestock feed, resulting in inflated prices for cattle, beef heifers, cows, sheep, goats, chickens, turkeys, pigs, and ducks. If steps are not taken on a worldwide basis to reverse global warming, the humble corn chowder may soon become a delicacy.
