Description
Ratatouille is a traditional French Provençal stewed vegetable dish that originated in Nice, France, and is popular along the Mediterranean coast. Ratatouille is derived from the French term “touiller,” which simply means to “toss food.” Originally it was considered “peasant food” because of the plentiful late summer vegetables harvested on the farm. Provençal cuisine is obsessed with different types of native herbs, olive oil and garlic. Their brightness elevates the freshly cut vegetables into a satisfying and colorful delicacy. Classic Ratatouille is a vegetarian recipe consisting of eggplant, zucchini, tomatoes, onions, and peppers. It is always best in the summer when the vegetables are at their peak flavor. Preparing the vegetables to make ratatouille is a meditative process with a delectable conclusion.
